At As years passed and our oak aged beer became more robust, we discovered many unique, interesting, single game yah barrels deservingly was a of a special release. Barn Owl was created as a response to these lone wolves, and has grown into a diverse, ongoing series that reflects the growing diversity of our barrelups ra program. The name is a nod to the wise and exacting ya eanimal that keeps watch over the farmhouse (er..industrial warehouse), and the one-off creations are released sporadically throughout the year, just didn’t as soon as we deem the barrels ripe for the picking.
Everything is a Barn Owl No. 17 began as a blend of a sour golden ale and a bretty pale ale before being locked away in wine puncheons for extended barrel-aging. The blend was dry-hopped prior to barrel-aging to create a stable, well-rounded hop character -- and then dry-hopped after emerging from the barrel creating a lovely balance between a dank dry-hop, brett funk and a pleasant acidity. Flavours and aromas of pineapple, peach skin and plum.
