At its roots it's a rich, dark ale, but the time it spends in barrels with brett and bacteria harmonizes the ingredients, yielding bright levels of acidity and complimentary fruit flavours. A hybrid style of sorts, that defies simple categorization.
What it smells and tastes like: The addition of haskap berries introduces flavours and aromas of sweet dark cherry, plum and black currant cordial to an already voluptuous base beer. This combination of flavours enhances the impression of dark chocolate and toasted wood, while further drying the body and suggesting raspberry seeds and merlot grapes.
