No Minutes to Midnight: the name, label and beer make up a modern variant of 3 Minutes to Midnight (a Cognac Barrel-Aged Cherry/Cocoa Imperial Stout we last released in 2018). In the 4 years since, we’ve fine-tuned our base stout recipe, experimented widely with adjuncts, procured many a barrel, and been able to source better and better ingredients for just about everything we make.


No Minutes to Midnight was aged in bourbon barrels for a year and conditioned on a ludicrous amount of dried strawberries (a delicious snack, btw) and a similarly bonkers quantity of roasted cocoa nibs. It’s velvety smooth and sticky in the best way, with pronounced notes of sweet dark cocoa, anise, marzipan and strawberry, all within a bourbon embrace. The result is a mind-meltingly delicious stout that straddles the beer-dessert continuum.
